Chocolate Bourbon Bisciuts

Well, I had a lovely day today. Who would have thought you could have had so much fun making biscuits? We had a friend over today and had a lot of giggles making bourbons with cookie cutters, just to name a few, we created mini Scottie dogs, bunny rabbits, and a whole army of pigs as well as one of darleks (As in from Doctor Who). I think we must have spent a good couple of hours, rolling out and cutting different animals, endless entertainment...

The only thing I would say is, they recipe does make A LOT of biscuits,we were okay because we sent the darleks and piggies away with our friend, so there wasn't SO many to eat; not that, that isn't a good thing...

Bourbon Biscuits From the Primrose Bakery
Ingredients:

  • 225g Unsalted butter
  • 225g Golden caster sugar
  • 4 Teaspoons of Golden syrup
  • 340g Self-Raising flour
  • 115g Cornflour
  • 115g Cocoa powder
  • 5 Teaspoons of water (possibly more)
  • Chocolate butter icing (recipe below)
Method:
Pre-heat the oven to 180c.
In the bowl of an electric mixer beat the butter, sugar and golden syrup until smooth. Next, sift in the flour, cornflour, and cocoa flour then beat into the butter mixture with the water, if the dough is a little dry and sandy then add more water. Once the dough is ready, knead until smooth then roll out to around 0.5cm/5mm and use cutter to make shapes. Put the shapes into the oven for around 10 minutes. Leave to cool before pairing up the shapes and spreading one half with chocolate butter icing. Put the biscuits together and place in the fridge until the icing has hardened.

For the butter icing:
Ingredients:
  • 300g Icing sugar
  • 100g Unsalted butter (softened)
  • 40g Cocoa powder
  • 2 Tablespoons of milk
In a free-standing mixer (or bowl, and use an electric whisk) sift the icing sugar, and cocoa powder, add the butter and beat on a slow speed until the icing comes together in a ball (this may take sometime but have faith and stick at it) next, add the milk a spoonful at a time and turn up the mixer to a high speed and beat for a couple of minutes, until light and fluffy.
