Chocolate and Rasberry cake


I made this cake a while ago for my mums birthday and have been meaning to put the recipe on but have just not had chance! This cake is definitely not one for any bakers who aren't total chocoholics because it's VERY chocolatey and might be just a little much for some... But I personally love it! It looks really nice as well because the icing goes really glossy and smooth! Click the link below for the recipe!

Chocolate and Raspberry cake


Ingredients:

  • 175g Self raising flour
  • 2 Tbsp Cocoa Powder
  • 1 Tsp Bicarbonate soda
  • 150g Caster sugar
  • 2 Eggs Beaten
  • 150 ml (1/4 pint) Sunflower oil
  • 150 ml (1/4 pint) Semi skimmed milk
  • 2 Tbsp Golden syrup
  • Strawberry Jam
Method:
Sieve the flour, cocoa and Bicarbonate of Soda into a bowl. Add the sugar and mix well. Make a well in the centre and add the syrup, eggs, oil and milk. Beat well with electric whisk until smooth. Spoon the mixture into the two tins and bake for 25 - 30 minutes until risen and firm to the touch. Remove from oven, leave to cool before turning out onto a cooling rack. Spoon the jam onto one of your cakes and spread in a very thick layer! (the jam adds sweetness so don't be sparing with it!)


To Top:

  • 200g Dark Chocolate
  • 200g Unsalted butter
  • Fresh Raspberries
Melt the ingredients together in a bowl over a pan of simmering water. Using a spatula smooth in a thick layer over the cake, then decorate with fresh raspberries.
